Avocado Dressing

 

1 sm ripe avocado

1/4 c fresh lemon juice

1 tsp Dijon mustard

1/2 tsp sugar

1-1 1/4 tsp salt

1/4 c cream, heavy or half and half       

1/2 c fresh parsley, packed

1/2 c olive oil

 

Peel and pit avocado; mash enough to measure about one-half cup.  Combine avocado with remaining ingredients in a food processor or blender and process until smooth.  If too thick, thin with additional cream.

 

Makes about 1 1/4 cups.
