Russian Salad Dressing

 

4 lg tomatoes

1/4 c oil

1/4 c water

1/4 c lemon juice

1 sm onion, minced

1 tsp salt

1 tsp horseradish

1 tsp paprika

1 tsp minced garlic

 

Combine all ingredients in a food processor or blend and process until smooth, about three minutes.  Store tightly covered in refrigerator.

 

Makes about 1 1/2 cups.

 

Prep Tips: Since we won’t see fresh tomatoes for a while, canned tomatoes will work fine.  Use a 15 oz can of unseasoned, diced tomatoes, including juice, and omit water in recipe.
