Tahini Dressing

1/4 c tahini (Middle Eastern sesame paste)

1/4 c water

2 1/2 tbsp fresh lemon juice

2 tbsp soy sauce or tamari

1 tbsp honey

1/2 tsp minced garlic

1/2 tsp salt

1/4 tsp cayenne or red pepper

 

Combine all ingredients in a food processor or blender until smooth.

 

If dressing seems too thick, blend in additional water, a teaspoon at a time, until desired consistency.  Store in refrigerator and allow to come to room temperature to serve.
