Curried Kale and Chickpeas

2 tbsp vegetable oil

1 1/2 c chopped onion

4 cloves garlic, minced

1/2 tsp cumin

3 c chopped kale

1 1/2 tbsp curry powder

1 tsp ground ginger

1 tsp ground coriander

1 1/2 c vegetable broth

3 c cooked chickpeas

1 c chopped tomato

1/4 tsp salt

 

Combine all ingredients in your crock pot and cook on low for 7 to 8 hours, or on high for 4 hours or combine ingredients in a stew pot and cook on top of the stove for 2 hours.
